Instructions

  • Combine rice and water in a medium saucepan.
  • Bring to a boil, then reduce to a low heat and cook for 18-20 minutes, or until the rice is tender.
  • Meanwhile, in a large skillet or wok over medium-high heat, heat 1 tablespoon vegetable oil.
  • Cook until the chicken is browned and cooked through, about 5-7 minutes.
  • Set aside the chicken from the skillet.
  • To the skillet, add another tablespoon of vegetable oil.
  • Cook for 3-4 minutes, or until the broccoli is tender, with the broccoli and garlic.
  • Set aside the broccoli from the skillet.
  • Cook, stirring frequently, until the eggs are scrambled and cooked through, about 2-3 minutes.
  • Set aside the eggs from the skillet.
  • To the skillet, add the remaining tablespoon of vegetable oil.
  • Add the cooked rice, soy sauce, salt, and black pepper to taste.
  • Stir everything together and cook for 2-3 minutes, or until the rice is heated through.
  • Combine the chicken, broccoli, and eggs in a skillet with the rice.
  • Cook for an additional 2-3 minutes, or until everything is thoroughly heated.
  • Serve immediately and enjoy.
