Instructions

  • Heat the vegetable oil in a large skillet over medium-high heat.
  • Stir in the Massaman curry paste for 1-2 minutes.
  • Stir-fry the chicken until it is browned.
  • Combine the coconut milk, chicken broth, fish sauce, tamarind paste, and brown sugar in a mixing bowl.
  • Bring the mixture to a boil, then reduce to a medium-low heat.
  • Cook for 10 minutes.
  • Cook for another 15-20 minutes, or until the potatoes are tender and the chicken is cooked through, before adding the potatoes and onions.
  • Remove from the heat and stir in the roasted peanuts.
  • Before serving, garnish with cilantro.
