Instructions
- Preheat the oven to 375°F.

- Pound chicken breasts to an even thickness with a meat mallet.

- Tuck the sides in as you roll up the chicken breasts.
- Use toothpicks or kitchen twine to secure.
- In an ovenproof skillet, heat the olive oil over medium-high heat.
- Cook until the chicken breasts are browned on all sides, about 5 minutes.
- Place skillet in preheated oven and bake for 20 minutes, or until chicken is cooked through.
- Before serving, remove any toothpicks or kitchen twine.
