Instructions

  • Preheat the grill to medium-high.
  • Remove any giblets or excess fat from the chicken and clean and dry it.
  • Combine the olive oil, paprika, garlic powder, salt, and black pepper in a small mixing bowl.
  • Rub the spice mixture all over the chicken, including the cavity and under the skin.
  • Open the beer can and take a few sips (or pour out about 1/4 of it).
  • Place the beer can on a flat surface and carefully lower the chicken onto it, ensuring that the can is inside the cavity and the chicken is standing upright.
  • Arrange the lime slices and cilantro around the chicken's base.
  • Transfer the chicken and beer can to the grill, and place it over indirect heat.
  • Cook for 60-75 minutes, or until the chicken reaches an internal temperature of 165°F, covered on the grill.
  • Take the chicken and beer can off the grill and set aside for 10 minutes before carving and serving.
