Roasted Chicken with Potato Puree, Tomatoes and Asparagus Recipe

This delectable roasted chicken dish is accompanied by a creamy potato puree, roasted cherry tomatoes, and asparagus. This is an excellent dinner recipe for any occasion.

  • Prep Time: 15 minutes
  • Cook Time: 40 minutes
  • Total Time: 55 minutes

Instructions

  • Preheat the oven to 425°F (218°C).
  • Peel and cut the potatoes into small cubes.
  • Cook for 15 minutes in salted water until tender.
  • Drain potatoes and mash until smooth with heavy cream, butter, salt, and black pepper.
  • Place aside.
  • Using paper towels, pat the chicken dry and season with salt and pepper.
  • In a large oven-safe skillet over medium-high heat, heat the olive oil.
  • Cook until the skin of the chicken is browned, about 5 minutes.
  • Transfer the skillet to the preheated oven and flip the chicken.
  • Roast the chicken for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
  • Toss cherry tomatoes and asparagus with olive oil and season with salt and pepper while the chicken roasts.
  • Place the vegetables on a baking sheet and roast for 10-15 minutes, or until the asparagus is tender and the tomatoes are bursting.
  • Serve the roasted chicken with potato puree and roasted vegetables on the side.
