Chicken Biryani with Mint is an aromatic and flavorful dish that combines tender chicken and fragrant basmati rice with a hint of fresh mint. It makes an excellent one-pot meal for any occasion.

- Rinse the basmati rice in cold water until it is clear.
- Soak the rice for 30 minutes in water.
- In a large pot, melt ghee or oil over medium heat.
- Cook for 1 minute after adding cumin seeds.
- Add the onion, garlic, and ginger slices.
- Cook until the onion becomes translucent.
- Cook until the chicken is browned.
- Combine the coriander powder, turmeric powder, garam masala, red chilli powder, and salt in a mixing bowl.
- Cook for 1-2 minutes, stirring occasionally.
- Add the soaked rice, mint leaves, and 2 cups of water.
- Bring the water to a boil.
- Reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the rice is tender and the liquid has been absorbed.
- Allow the biryani to rest for 5 minutes after turning off the heat.
- Serve hot with raita or yoghurt on the side.
